Certificate of Proficiency in Dietary Management Program

ANFP (Association of Nutrition & Foodservice Professionals) has granted full approval to the Dietary Management hybrid training program offered through the University of Arkansas Pulaski Technical College Culinary Arts & Hospitality Management Institute. The certificate program is listed on the ANFP website as an approved program. The Dietary Management program was designed to use the ANFP curriculum and includes a 150-hour internship.

The field experience is appropriately precepted and has a required 150 hours. A Registered Dietitian Nutritionist directly precepts a minimum of 25 of the 30 nutrition-related field experience hours and manages the entire 150 hours.

The Dietary Management Certificate of Proficiency program consists of six courses/18 credit hours:

  1. Applied Foodservice Sanitation, CUL 1301
  2. Healthy Foods for Culinary Professionals, CUL 2307
  3. The Restaurant Industry, HOS 2302
  4. Food Production I, CUL 1302 or HOS 2330
  5. Nutrition for Dietary Managers, CUL 2335
  6. Dietary Manager Internship, CUL 2340

Students that successfully complete these six courses will be eligible to sit for the CDM Credentialing Exam under Pathway I. Students are eligible for ANFP Pre-Professional membership; graduates are eligible to apply for the CDM, CFPP Credentialing Exam and ANFP Professional membership. The goal of this program is to equip students with the knowledge and practice they need to be a successful Certified Dietary Manager in a health care facility, long-term care setting, or in school nutrition.


Technical Certificate in Dietary Management Program

This Technical Certificate program provides knowledge and laboratory experience to prepare students for the dietary manager profession. This TC includes the six courses in the Dietary Management program plus the following classes for a total of 10 courses/30 credit hours:

  1. Product ID and Quantity Purchasing, HOSP 10233
  2. Food and Beverage Management HOSP 21343
  3. English Composition I
  4. Mathematical Reasoning or College Algebra
