The mission of the Culinary Arts and Hospitality Management Institute (CAHMI) is to deliver education, experience, and excellence through high- quality academic programs that meet stakeholder needs in a global market.

The University of Arkansas – Pulaski Technical College Culinary Arts and Hospitality Management Institute provides an intensive, comprehensive course of study in the culinary arts. The programs are designed to prepare students for professional careers in the foodservice industry. The courses integrate classical and modern culinary techniques with strong kitchen management skills.

The UA-PTC Culinary Arts programs emphasize procedures as well as the evolution and diversity of the culinary arts. Students in these hands-on programs will master the preparation of breads, pastries, desserts, appetizers, soups, sauces, garde manger, charcuterie, and entrees. They learn to identify, fabricate, and portion meats, poultry and seafood. In addition to practicing modern and classical techniques, the programs provide students with professional kitchen management knowledge. They learn essential skills such as appropriate sanitation, hygiene and safety procedures, cost control management, and styles of table service.

Program Learning Outcomes

  • Identify principles of menu and food service facility layout and design.
  • Understand where food comes from, differences in growing practices and how to prepare a seasonal menu.
  • Demonstrate and discuss the differences in cuisines and ingredients used around the world.
  • Prepare regional, international, and classical cuisine dishes and demonstrate an understanding of how they are utilized in the contemporary food service industry.
  • Develop skills integral to success in the food industry including speed, stamina, dexterity, and timing.
