Culinary Community Education

University of Arkansas - Pulaski Technical College’s Community Education Program offers a variety of hands-on, non-credit culinary classes offered at the college's state-of-the-art Culinary Arts and Hospitality Management Institute (CAHMI) that are open to the public year around. Community Education Policies

Registration Requirements: Registration is required for all Community Education classes. To begin registration please click on the class title. To register by phone, please call Kristin Howell at (501) 907-6670 ext. 3407

Cancellation Policy: 100% refund if canceled at least 7 days before the class date. Cancellations occurring within 7 days of the class date will only receive a refund only if the class spot can be sold.

Community Education Class Enrollment Minimum Policy: In order to use teaching resources to their fullest, a Class Enrollment Minimum Policy is used to ensure that courses offered have a minimum number of enrolled students. Such a policy allows students to engage with a sufficient number of other learners in the classroom and also efficiently uses instructor time, thus facilitating the research and service portions of instructor obligations. In the event that a class is cancelled due to low enrollment, all registrants will receive a full refund.

Fresh Mozzarella and Ricotta

Get cheesy and have fun with Chef Angela Nix! Students will learn how to make fresh Mozzarella and Ricotta cheese. Learn how to turn salt, water, and cheese curds into delicious, mozzarella! Then, the class will turn its attention to making hand-made ravioli that is stuffed with fresh Ricotta. Learn about origin, types, storage, and a variety of ways to use your cheese. Each student will get to take home everything made, plus, recipes with tips and tricks so you can keep making cheese long after you leave class.

Adults Only Cooking Challenge! Have you ever wondered what it would be like to compete in a tv-style food challenge? Now is your chance! See what is in the mystery basket and find out how the judges will score your offerings. You will all receive the same mystery basket as well as have access to a pantry of basic ingredients. 10 minutes to plan once you see the contents of the basket, 90 minutes to prepare, plate, and present.

Cook Like A Pro - UA - Pulaski Tech teaches a 7-Part Cooking Series that will cover the culinary fundamentals sure to make you a pro in your own kitchen! Classes in this series include Basic Knife Skills and Butchery, Moist and Dry Heat Cooking Methods, Pasta and Cheese Making, Breads, and Desserts. We will end the Cook Like A Pro Series with tasty and satisfying desserts! Learn how to make and perfect custards, like Creme Brulee, Cheesecake, and Bread Pudding. These velvety and rich treats look complicated and complex to make; however, we will go step-by-step through the process giving you the skills, confidence, and recipes to make these desserts from home.

2-Day Cookie Workshop

This intermediate workshop is for the cookie enthusiast! Learn how to glaze, flood, layer, airbrush, and apply 3D designs and details using traditional royal icing. Classes will be taught on Wednesday, March 15, and Thursday, March 16, and students must commit to both sessions.

Day 1: Learn to glaze, basic flooding, and cookie design. Cookies will be left to dry overnight.

Day 2: Focus on layering techniques, including airbrushing and 3D designs.

Cake Decorating 101: Shaped and Carved Cakes

In this 10-part series, Chef Natalie Madison will focus on basic, intermediate, and advanced details of cake decorating. Topics that will be covered are Modeling Chocolate, Buttercream, Cake Toppers, Leveling and Icing, Textured Cakes, Fondant, Basket Weave and Floral Design, Buttercream Borders, Scrollwork, and Swags, Shaped Cakes, and Mastering the beautiful yet complex, Buttercream Rose.

Class 10: Shaped and Carved Cakes

Learn simple approaches to shaping and carving cakes.  In honor of the upcoming Summer season, students will make a “Gone Fishing” cake that is perfect to share with the fisherman or woman in your life.

Cost: $75 per class or $700 for the complete 10-part Cake Decorating 101 series.  (Register here for the full Cake Decorating 101 Series) Series can be paid in two $350 installments.  
Ages: 14 and up.  Kids between the ages of 10-13 may enroll with a registered adult.
